Jewish Star Ice Cream Sandwiches

Directions

1) Bake your favorite chocolate chip cookie dough (recipe below), leaving out the chocolate chips.
2) Place your cookie dough inside of a Jewish-star shaped cookie cutter (spread evenly) and bake for 8-9 minutes until edges are crisp but middle of the cookie is still soft.
3) Let the cookie cool and gently remove the cookie from the cookie cutter.
4) Clean the cookie cutter and repeat for additional Jewish-star shaped cookies.
5) Slice a chunk of vanilla ice cream and place onto a dairy cutting board.
6) Push the cookie cutter into the ice cream slice and remove excess ice cream from outside of the cookie cutter.
7) Freeze the ice cream inside of the cookie cutter for one hour.
8) Flip the cookie cutter upside down and gently pop out the ice cream Jewish star.
9) Insert the Jewish star ice cream chunk between two fully cooled Jewish star cookies and freeze for 15 minutes.
10) Remove from the freezer.
11) Toss blue and white sprinkles onto the vanilla ice cream while rotating your ice cream sandwich.
12) Freeze again for 15 minutes and then serve. Enjoy!

Cookie Recipe

Preheat oven to 375 degrees.

Ingredients:
1 cup of unsalted butter (softened)
3/4 cup of sugar
1 1/4 cups of brown sugar
2 eggs
2.5 teaspoons of vanilla
3 cups of flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt

Combine sugars with softened butter. Stir in eggs and vanilla. Add flour, baking soda, baking powder, and salt. 

Bake until slightly crisp around edges but softer in the middle of the cookie. Let your cookies cool on a baking sheet for a little while before transferring them to a cooling rack so the center will settle.
