Jewish Star Ice Cream Sandwiches

Directions

1) Prepare your favorite chocolate chip cookie dough (recipe below), leaving out the chocolate chips.
2) Press the dough evenly into a Jewish-star shaped cookie cutter. Bake at 375°F for 8-9 minutes, until edges are crisp and the centers remain soft.
3) Allow the cookies to cool completely, then gently remove the cookie from the cookie cutter.
4) Clean the cookie cutter and repeat to make additional Jewish-star shaped cookies.
5) Slice a thick piece of vanilla ice cream and place on a dairy cutting board.
6) Press the cookie cutter into the ice cream and remove any excess ice cream from around the edges. 
7) Freeze the ice cream in the cookie cutter for about 1 hour, until firm.
8) Flip the cookie cutter upside down and gently pop out the ice cream Jewish star.
9) Place the Jewish star ice cream chunk between two fully cooled Jewish star cookies and freeze for 15 minutes.
10) Remove from the freezer and roll the edges in blue and white sprinkles.
11) Return to the freezer for an additional 15 minutes before serving.

Cookie Recipe

Preheat oven to 375°F.

Ingredients:
1 cup of unsalted butter (softened)
3/4 cup of sugar
1 1/4 cups of brown sugar
2 eggs
2 1/2 teaspoons of vanilla
3 cups of flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt

1) Combine sugars with softened butter.
2) Stir in eggs and vanilla. Add flour, baking soda, baking powder, and salt. 
3) Bake for 8-9 minutes, until the edges are slightly crisp and the centers remain soft.
4) Let your cookies cool on a baking sheet briefly before transferring them to a cooling rack to set completely.
