Best Matza Ball Soup
Directions for the Best Matza Ball Soup
Here's my mom's recipe Save this for when you really need it
.
You'll need:
1 big soup pot (mine is 8 quarts)
4-5 pieces of raw chicken
4 onions
2 small parsnips
1 turnip
6 carrots
4 celery stalks
1 heaping tablespoon of salt
3/4 teaspoon pepper
1 teaspoon of parsley
1 teaspoon of dill
Optional: 1/2 bag of kosher chicken soup mix (I used a packet from the Manischewitz matzo ball and soup mix box)
Fill up soup pot halfway with water and bring to a boil
Carefully place pieces of raw chicken into pot
Carefully place pre-prepped veggies into pot
Bring back to a boil (I place the lid back on and leave it open slightly)
Skim foam from the chicken if it accumulates
Add in dry ingredients (except for soup mix)
After the pot has been up for 1.5 hours, remove all chicken from soup (I save some to eat)
Add more water to bring the pot to at least half full, if not 3/4 full
Optional: Add 1/2 bag of chicken soup mix
Bring back to a boil and let simmer for 15 more minutes
Feel better!
